Gingery Grilled Stone Fruit and Cucumber Salad

chopped fresh tarragon
small red onion, thinly sliced
- In a large bowl, whisk together 2 tablespoon olive oil, rice vinegar, grated ginger, chopped fresh tarragon, and salt.
- Add seedless cucumber and sliced red onion and toss to combine.
- Cut plums into 1-inch wedges. Toss with 1 tablespoon olive oil and grill over medium-high until charred, 2 minutes per side. Toss with cucumber-onion mixture.
